Olive trees are extraordinary and demanding plants;
their health and respect for their vital rhythms are our first concern,
because we know that only trees in the best of conditions can produce good oil.
60% of our olives come from the Correggiolo cultivars, and 40% from Leccino and Moraiolo. Harvesting is carried out by hand
with the use of facilitators, usually between mid-October and early November. Within 48 hours we deliver the olives to the nearby oil mill
“Oleificio Val d’Orcia” in Castiglione d’Orcia, where they are cold pressed in a cycle reserved for organic production,
thus ensuring the correct closure of the supply chain.
We store the oil in a dedicated room in our cellar and bottle it only at the time of order.
